I will discuss our latest advances in a Sr optical atomic clock where we have achieved measurement precision of 1E-17 with a record-low 500 s measurement time. This unprecedented spectroscopic tool has allowed us to explore many-body quantum dynamics where seemingly weak atomic interactions give rise to correlated states.
